This was a childhood favorite of mine! My sister and I frequently requested these cupcakes on our birthdays instead of cakes, and they were always popular for special occasions in general.
These are wonderfully rich and moist, with the cream-cheese filling and chocolate chips adding an extra level of decadence.
- 1 (8oz) package cream cheese
- 1 egg
- 1/3 cup white sugar
- 1/8 tsp salt
- 1 cup chocolate chips (semi-sweet)
- 1 1/2 cups all-purpose flour
- 1 cup white sugar
- 1/4 cup cocoa
- 1 tsp baking soda
- 1 cup water
- 1/3 cup vegetable oil
- 1 tbsp distilled white vinegar
- 1 tsp vanilla extract
- 1/2 tsp salt

Preheat oven to 350 degrees F

Beat together the filling ingredients and then stir in the chocolate chips. Set aside.

In a mixing bowl, sift together flour, sugar, cocoa, baking soda, and salt. Add water, oil, vinegar, and vanilla. Beat until well combined; batter will be thin.

Insert paper or foil cupcake cups into muffin pan. Fill each 1/3 full with batter. Add a spoonfull of filling to each cup.

Bake for 30-35 minutes.
